Sate padang. Sate padang is a speciality satay from Minangkabau cuisine, made from beef cut into small cubes with spicy sauce on top. Its main characteristic is the thick yellow sauce made from rice flour mixed with beef and offal broth, turmeric, ginger, garlic, coriander, galangal root, cumin, curry powder and salt. In Medan, many Sate Padang use not only beef but also chicken and lamb.

Bahan Sate padang

  1. Dibutuhkan 500 gr of daging.
  2. Dibutuhkan 5 sdm of minyak untuk menumis.

  5. Gunakan 1 lembar of daun kunyit.
  6. Sediakan 1 tangkai of serai (geprek).
  7. Dibutuhkan 150 gr of tepung beras (larutkan dgn sedikit air).

  9. Gunakan 3 lembar of daun salam.
  10. Siapkan 3 cm of lengkuas (geprek).
  11. Sediakan 3 liter of air.

  13. Siapkan 75 gr of bawang merah.
  14. Gunakan 50 gr of bawang putih.
  15. Dibutuhkan 100 gr of cabe.
  16. Gunakan 80 gr of jahe.
  17. Siapkan 80 gr of lengkuas.
  18. Diperlukan 80 gr of kunyit.
  19. Diperlukan 2 sdm of bumbu pemasak kambing.
  20. Dibutuhkan 1 sdm of ketumbar bubuk.
  21. Gunakan Secukupnya of garam.

  23. Sediakan 1/4 sdt of adas.
  24. Diperlukan 1 butir of pala.
  25. Diperlukan 1 sdt of jintan.
  26. Diperlukan 1 sdt of merica.
  27. Dibutuhkan 2 bunga of lawang.
  28. Diperlukan 7 butir of kapulaga.
  29. Gunakan 7 butir of cengkeh.

Langkah-langkah membuat Sate padang

  1. Rebus daging,,daun salam & lengkuas hingga daging setengah empuk & darah habis. Potong2 dadu daging ny. Sisihkan air rebusan nya.
  2. Haluskan semua bumbu kasar,,lalu ayak.
  3. Tumis bumbu halus,, bumbu kasar ayak,, daun jeruk,,daun salam,,daun kunyit,,dan sereh. Tumis sampai wangi & bumbu matang. Bagi bumbu jadi 2.
  4. Tumis setengah bumbu tadi dengan daging yg sudah di potong2. Beri air secukupnya. Rebus hingga daging empuk & bumbu meresap. Setelah matang,,dinginkan.
  5. Tusuk daging dengan tusuk sate lalu panggang di atas arang. Sembari memanggang..lumuri daging dengan bumbu sisa rebusan..
  6. Untuk kuah nya: masak air rebusan daging dengan sisa bumbu tumis tadi. Masukkan larutan tepung beras. Tuang pelan2 sambil terus di aduk agar tidak menggumpal. Masak hingga kuah mengental & meletup2..
  7. Koreksi rasa. Setelah dirasa pas..sajikan sate dengan siraman kuah & taburan bawang goreng. 🤤.

Along with the spice mixture, one of the unique aspects of Sate Padang is the yellow brown sauce that is smothered all over it. Sate Padang is similar to Sate Pariaman and Sate Padang Panjang. As Sate Pariaman is usually served with a red sauce, Sate Padang is typically served with a yellow colored one. Note: If you are using beef instead of oxtongue, you don't need to initially boil the meat in water first. Just cut the the beef in cubes, put in water with spices then.
